An uncommon wine - white wine made of red grapes (Blanc de Noirs)

Bobal is the "queen" grape variety in the neighbouring winemaking regions of Utiel-Requena and Manchuela, and Aleph decided to use this red grape to make a white wine! Right after harvest the grapes were put in the press but only the first free run natural gravity pressed grapes juice was collected for this wine (avoiding the skins from staining the must). Fermented in stainless steel tank and aged on the lees for more structure, this wine is one of the first "white bobals" in the market!
