100% syrah from La Mancha, planted in 2004, harvested on 23rd of December, 2013 at -5ºC. Destemmed and left for the fermentation with indigenous yeast for a whole year. Afterwards pressed and racked into 630 l chestnut barrels. Only 300 0,5 l bottles have been bottled in 2015, the rest is still aging.. It is an impressive sweet red wine, with a 16º alcohol by volume and 120 grams of residual sugar but with a surprisingly high acidity!
