Spätburgunder is the German name for Pinot Noir
The Pinot Noir grapes for this wine come from a single vineyard called Sonnenberg, literally meaning the "sunny hill", so it has perfect conditions for good ripening. The soils are slime with high levels of limestone (sea shell remains), and southern winds refresh and dry the vinyeards helping to achieve perfect conditions for healthy grapes harvest.
Grapes were hand picked on the 9th of October, fermentation took 14 days with wild yeasts, and afterwards the wine was aged for 18 months in some old oak barrels.
The wine is loaded with black fruit (black current ham, black cherry), with some herbal notes (spice herbs), very easy to drink!
Organic famring, natural winemaking (only 20 mg os sulphites added), unfiltered, super low production of 596 bottles.
