A skin contact Verdejo by Ismael Gozalo
Orange wine made of verdejo, destemmed and fermented on skins in a small 320 litre clay vessel (tinaja or amphorae), by sealing the vessel carbonic maceration occurs and lasts for about 5 weeks. After 6 months half of the skins are pressed and the wine is blended and aged for further 11 months in the same amphorae.
A rather extreme way of making an orange wine!
