Cau Eden makes this wine with muscat a petit grains from a 45 year old vineard (90% of the blend) and with a small portion of grenache gris coming from an old planting (70 years old). Almost all the grapes are destemmed for skin contact fermentation without temperature control during 7 days. Afterwards the wine is racked into old oak barrels for 8 months aging before racking into stainless steel tanks before bottling. Only 800 bottles made!
It is important to say that this wine despite being made with muscat, which is a very aromatic variety, is rather delicate with delivious floral notes along with abundant herbal and stone fruit aromas. A glass of this wine will go perfectly with some starters or fresh oysters!
