A genuine orange txakoli! Although "Bat Berri" means "a new one" in Basque language, this 2018 vintage is the third for the winery Itsasmendi.
It is made with Hondarrabi Zuri grapes sourced from a single vineyard located in Gernika at the sea level.
The curious thing about this wine is the winemaking: whole bunches are put in a stainless steel tank and sealed for the carbonic maceration (and fermentation on skins) for 15 days. During the alcoholic fermentation the malolactic takes place, too. Afterwards the wine is racked into white clay amphoraes for fining during a couple of months.
Itsasmendi winery is reducing the use of sulphur in their wines so this orange wine is made like a natural wine and only a minimal amount of SO2 is added before bottling for perfect wine conservation.
This is a fresh, perfumed, complex and food friendly orange wine.
