One of the most special wines is this La Time from Llanos Negros. The name (as in most of their wines) comes from the plot where 60+ years old Listan Blanco vines are grown. Ancient volcano slope, volcanic soils covered with "black sand", the usual picture of Canary vineyards.
Winemaking notes: the grapes were fermented partially on the skins (so it is almost an orange wine, yet let's label it as a skin-contact wine) in the original winery's cement tanks built in 1947. After 6 days the skins were removed and the wine finished the fermentation. The tank was sealed for almost 15 years until it's bottling in July 2015.
Our tasting note: light gold in color, very special aromas in the nose (it needs some time to open), with spices (white pepper, saffron), mineral notes and cheese rind with honey, among others. On the palate it shows nice acidity, dried herbs and mineral notes, a linear and elegant wine. Goes well with mushroom dishes or oysters.
Only 2.340 bottles were filled of this unique wine.
We highly recommend decanting the wine and using big glasses so it can breathe and release it's hidden aromas and flavors.
