The sparkling wines made by ancestral method have only 1 fermentation process: for this wine it starts in a chestnut barrel and at some stage it is bottled so that the alcoholic fermentation can be finished inside the bottle. No dosage is added as the yeasts and sugars come from the grapes (original must).
It is a truly exquisite and exclusive wine!
Yellow gold with amber hue. Medium bubble.
Fresh yeast, toasted, sap, fresh apple juice, pear compote, apricot.
Sharp acidity, noticeable sugar and alcohol levels, crunchy bubble, notes of fruits in syrup, apple, citrus, fresh.
