Vega de Ribes is a small family estate with organic farming decades ago before this type of agriculture became fashion. Located nearby the Natural Park of Garraf, placed in between the Mediterranean Sea and the mountains.
The sparkling wines made by ancestral method also known as pet-nat (short for the French term petillant naturelle), have only 1 fermentation process: unlike the wines made under Cava, Corpinnat, Champagne or Cremant labels.
In this case, Xarello grapes have been pressed very slowly (hence extracting a bit more of flavours and colour from the skins), and put to ferment part in chestnut barrels and part in steel tanks. Before the process was over the wine was bottle and put on rest.. for over 10 years now! It is disgorged before released to the market, meaning that the winemaker changes the cork by releasing old yeast (lees).
The wine is unfiltered, may have some sediments, without any dosage / no added sugars, full of subtle bubbles, complex and palate friendly.
A steal for this price considering the time and effort spent to put this wine in the market!
