The sparkling wines made by ancestral method have only 1 fermentation process: for this wine it starts in a chestnut barrel and at some stage it is bottled so that the alcoholic fermentation can be finished inside the bottle. No dosage is added as the yeasts and sugars come from the grapes (original must).
Gold with amber hue, fine and scarce bubble.
Raw yeast, lactic (butter), smoke, sour apple, overripe white fruit,
Balanced yet low acidity-sugar and alcohol levels, small but short bubble, delicious note of sweet and sour barberry candy, long finish which evokes notes of a toasted barrel.
